# BASIC CAJUN DISH

## Ingredients:
- small amount of milk
- 1-2 sticks salted butter
- crawfish boil seasoning (Louisiana Fish Fry Products Crawfish, Shrimp & Crab recommended)
- 16oz. package bacon
- 2-3 12oz. sausages (beef recommended)
- 12oz. package shrimp (this recipe assumes precooked and tail removed)
- about 3c. beans
- white rice

## How to Cook Bacon:
1. Preheat oven to 400F.
2. Prepare a large oven sheet rimmed with parchment paper.
3. On prepared oven sheet, lay bacon out with as much exposed surface area as possible.
4. Place in oven and allow to cook until desired crispiness is reached.

## How to Cook Beans:
1. Rinse and sort beans.
2. Soak beans as instructed on package.
3. Before cooking beans, add crawfish boil seasoning to the cooking water, to taste.
4. Cook beans as instructed on package (a longer cook time may be desireable if you like softer beans).

## Steps:
1. Start beans cooking in advance.
2. Start bacon cooking. When finished, save the grease/fat, and cut the bacon into small pieces with scissors.
3. Cut sausages into slices.
4. Add sausage slices to large pot and add water until sausages are covered with at least a couple inches.
5. Add butter, milk to taste, and crawfish boil seasoning to taste.
6. Boil/simmer sausages according to package cooking directions.
7. Strain sausages from liquid, saving all liquid. Add sausages to a pan to finish cooking; mildly blacken the sides of each slice.
8. Return the liquid to the pot and add the bacon grease, bacon pieces, and (frozen) shrimp.
9. Simmer for long enough to thaw the shrimp, but avoid overcooking it.
10. Add the beans and sausage to the liquid mixture.
11. Serve over rice.
